Picked, raw and cooked vegetables with greens and served with a ring of grassini, breadstick dough with porcini powder. With Green Ranch made with buttermilk and yogurt.

This is the salad option or vegetarian option for guests. The ring of Grassini mimics the appearance of a flowerpot. The gluten free modification would be served without the grassini.

· The pudding will be prepared as a loaf, sliced and seared topped with a basil pesto sauce, tomatoes and pepitas (seeds, not nuts)
Lunch - Sandwiches
pancetta, fried egg, harissa aioli.
Hanger steak with harissa, lemon aioli, tomato, lettuce, caramelized onions, pancetta, and over medium egg. Served on focaccia.
rye, pickled cabbage, swiss, 1000 island dressing
House pastrami brined 7-10 days and smoked 14 hours with hickory, served on house rye with remoulade, swiss cheese, and pickled cabbage.

Brisket, sirloin, and chuck patty cooked to medium, topped with caramelized onions, Delice, lettuce, and lemon aioli; all on an onion bun. (When foie gras is added, Delice is not.)
